Cream is great for curries since you can fry the curry paste/seasonings in it (the fat holds the flavor).

A good coconut milk (i.e. Without added emulsifiers) should be separated in the tin though, so you can still take out just the pure fat and split that to fry the paste in, and then add the more liquid parts of the can after to simmer the curry.

The extra fat also keeps emulsifications from splitting.
